Cooking at home: low-carb salad with feta wrapped in bacon
In the current climate, many people are working at home. What sounds appealing at first can quickly become dangerous: the lack of everyday exercise and the proximity to the refrigerator make working at home a calorie trap. But of course you can also eat a healthy and balanced diet in times of corona: with less carbohydrates, but with more vegetables, protein and good fats. This low-carb recipe is quick to prepare and helps you stay healthy and fit at home.
INGREDIENTS (FOR 2 SERVINGS):

  • 1 bunch of arugula/rocket
  • 200 g sheep's or goat's cheese
  • 50 g bacon
  • 1 teaspoon sweet mustard
  • 2 tablespoons of olive oil
  • 1 tablespoon balsamic vinegar 
  • Salt
  • Pepper
  • Optional: Parmesan shavings to garnish
 
 
LET'S START:
  1. First, wash the arugula/rocket, drain well and arrange on the plate. 

  2. Make a salad dressing by mixing olive oil, balsamic vinegar, mustard, salt and pepper and drizzling it on the rocket.

  3. Cut the cheese into cubes, wrap with the bacon. If the bacon does not stick, simply use a toothpick to help.

  4. Heat oil in a pan on a medium heat and fry the cheese/bacon cubes until they are toasted on all sides and the cheese melts easily.

  5. Arrange on the rocket salad, garnish with parmesan shavings if preferred.
