Recipe tip: Sesame Oven Vegetables
For many, the pumpkin may not really be on the menu yet. However, this should be changed as soon as possible due to the fact that they are not just low in calories but full of vitamins and minerals. For example, they are plentiful in Vitamin C, and a great source of beta-carotene (which you can see by the bright orange color), which is converted in the body to Vitamin A and helps to support the immune system. In addition, pumpkin contains minerals such as potassium, magnesium, calcium and iron and is very filling thanks to its fiber content. So let's get creative cooking with pumpkins! Here we tell you about a real feel-good meal. It is easy to prepare and tastes fantastic:

Ingredients:

(for two persons)


Sesame oven vegetables:
  • 1 small Hokkaido pumpkin
  • 2 carrots, orange
  • 2 yellow turnips
  • 3 tablespoons sesame seeds
  • 3 tablespoons maple syrup
  • 1 teaspoon coriander seeds (finely ground)
  • Olive oil
  • Salt
  • Freshly ground pepper

Lemon-coriander yogurt:
  • 200 ml yoghurt
  • 1/2 lemon, juice and zest
  • 1 teaspoon coriander seeds (finely ground)
  • Fresh coriander (to taste)
  • 1 tablespoon of olive oil
  • Salt
  • Freshly ground pepper

Also:
  • 2 slices of goat cheese

Here's the way to do it:


  1. Preheat the oven to 200°C (top and bottom heat).
  2. In the meantime, wash the pumpkin, cut it in half and remove the core. Cut into slices. Peel the carrots and cut them into sticks of different sizes. Put the vegetables in an ovenproof dish and drizzle with olive oil.
  3. Use a pestle and mortar to grind the coriander seeds finely and then spread on the vegetables. Put them into the preheated oven.
  4. Mix maple syrup with sesame seeds, salt and pepper and put aside.
  5. Mix the yoghurt with the remaining ingredients and season with salt and pepper
  6. After about 20-30 minutes, when the oven vegetables have softened nicely, sprinkle with the sesame seeds and maple syrup and put back in the oven. Continue until the syrup begins to caramelize.
  7. Meanwhile, fry the two goat cheese rolls in a non-stick pan until crispy and brown on both sides.
  8. Finally assemble everything together on a plate and enjoy.
